The fourth of advent just passed and it’s only one more sleep until Christmas Eve. That is if like us you are celebrating on the 24th of course. My family and I are staying in London this year and despite all the storms this island weathered recently not one of them blew a single snowflake our way south.
Nevertheless, we played weather god and made it snow on a very special cake this holiday season. No Bûche de Noël, no Dundee cake and nope not a Stollen either. Shocking isn’t it?
In pursuit of a healthier lifestyle and changes to our diet this year we picked something lighter to bake. It has to have chocolate of course! We present you the perfect Chocolate Chiffon Cake with whipped cream and cacao nibs.
The recipe is from Nami aka Just One Cookbook. She posts about Japanese baking, cooking and traditions in a weekly newsletter. My mom has been following her for years. Her recipes are simply excellent.
Also, last year in March we attended a vegan baking course in Hong Kong and discovered chiffon cakes at JOMO. They love adding white peaks of perfectly whipped cream on top. It looks amazing and tastes incredible!
